This would be nice. 
Some customers may like to have the choice of how they view a website on their mobile devices.

This is not a bad idea actually as I have myself landed on several websites that were mobile ready but I tend to press the desktop version too.

I’m also looking for a way to disable the mobile version, can it be done by editing one of the theme files? I’m not fond of how my site looks with the mobile version

For the moment there is no option to disable the mobile version, but will surely bring such a one with the next update.
